The ancestral method is used to make sparkling wines with a single fermentation.The transformation of the must into wine begins in a tank and, before it is completed, the wine is bottled to end the fermentation in the bottle.It is a method that is being experimented a lot in the Penedès because it allows to obtain a sparkling wine without the need to make a 2nd fermentation by adding sugars that do not come from the grape.
